Fat Head Pizza Crust

 

For the past three (almost four) weeks I’ve completely changed the way I’ve been eating. Okay, I’ve cheated or “treated” myself once a week but other than that I’ve been staying on track. In the first three weeks I’ve lost 8.5 lbs and 5.5 inches. Yah me! When I first decide to change the way I was eating I wasn’t sure how this would affect our family. I wanted to eat healthier but I didn’t want it to create more work for myself. I didn’t want to make two separate meals every night…one for my family and one for myself. My kids are not really into broccoli and they love pizza.

After doing some research, I found a lot of great meals that would work with my low carb meal plan and my kids taste buds. Surprisingly they have actually liked a lot of new things we’ve tried but they have also discovered some new things that they absolutely do not like. Ha ha ha. Typical kids! Spaghetti squash was not one of those favourites even though I really liked it. I’ve also found a love for cauliflower after all these years of hating it.

We are a Friday night pizza eating family. Every Friday night we order from Papa John’s. We eat our pizza and watch a movie together (with or without my railroader). Unfortunately, pizza is not on the low carb meal plan for obvious reasons. Boo! So the first Friday night came and my railroader was home so he picked up Papa John’s for him and the kids. I decided I didn’t want to be left out watching them eat pizza (how fun is that?) so I decided to try Fat Head Pizza.

At first I was going to make it for the whole family but then decided against it because I didn’t want to “ruin” our Pizza night. I could just picture my kids complaining about how I ruined our pizza night with my nasty homemade pizza. And I’m not going to lie, after reading how to make it I wasn’t sold that it would be that great either. It ended up being super easy to make and tasted way better than I expected. My railroader tasted it and really liked it too.

Last Friday I decided to make it for the whole family and it was a huge hit. I thought it might be fun to make a mini tutorial on how to make it. My photography skills are not that great so don’t judge me. I will get better…I promise!

Instructions
  1. Put mozzarella and cream cheese in a microwaveable bowl and microwave for 1 minute. Stir and replace in microwave for another 30 seconds. (The bowl might be very hot so be careful.)
  2. Stir in a beaten egg and almond flour.
  3. With wet hands spread "dough" thin on parchment paper. It should spread evenly with dough-like consistency.
  4. Poke rows of holes with a fork in avoid bubbling.
  5. Sprinkle with garlic powder.
  6. Bake in oven at 450 degrees for about 8 minutes. Check it and poke holes where any large bubbles may be. Continue cooking for a told 10-12 minutes or until the top is slightly brown.
  7. Top with your favourite toppings and then cook for 8-10 minutes until cheese is brown.
